Homework Help: Home Economics: Cooking: Homemade Biscuits

*Preheat oven to 450 degrees*

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup milk

1. Gather all ingredients/supplies.

2. Measure dry ingredients into a mixing bowl and stir to blend with a fork. Cut shortening into flour with a pastry blender until it looks like meal.

3. Make a "well" in the flour/shortening mixture and add all liquids at once. Stir vigorously with a fork until the mixture rounds up in a ball and no ingredients remain in the bowl. Avoid overhandling!

4. Turn dough onto a lightly floured pastry sheet. For ease of handling, lightly cover hands with flour and roll the ball of dough around 3 to 4 times on the pastry sheet. Knead 5 to 10 times, working quickly.

5. Pat dough out with hands to 1/2 inch thickness.

6. Cut biscuits close togther with lightly floured biscuit cutters. Push leftover dough together lightly and pat out again. Avoid working in more flour and do not knead.

7. Use spatula to transfer biscuits to ungreased baking sheet. For crusty sides, place 1/2 inch apart on sheet. For soft sides, place close together on sheet.

8. Bake 10 to 12 minutes or until golden brown.
